A chef who fled communist Cuba is now making history with his culinary innovations in South Florida. Four months after opening its doors, Emelina in West Palm Beach has become the first Cuban restaurant in the world to receive a Michelin star, a distinction that many chefs work towards for decades.
Chef and co-owner Osmel Gonzalez sees this recognition as an opportunity to redefine Cuban cuisine, demonstrating what can be achieved when creativity isn’t restricted by scarcity.
Innovative Cuban Flavors
Gonzalez, aged 36, expressed his joy and excitement to Fox News Digital upon receiving the Michelin star. Named after his grandmother, Emelina offers a modern twist on traditional Cuban flavors, while still maintaining a strong connection to its cultural roots.

The Michelin Guide describes Emelina as sourcing most of its ingredients from South Florida to tell a unique story. Dishes like poached local oysters with yucca foam and mushroom powder show refinement, while cherry tomatoes with Cuban oregano chimichurri and macadamia milk foam highlight how simple ingredients can shine.
Preserving Tradition and Redefining Cuban Cuisine
Gonzalez is focused on enhancing classic Cuban dishes, not replacing them. His vision is deeply personal, given his experience of living the first 22 years of his life under Cuba’s communist regime. He notes that decades of communist rule have stifled culinary development.
“Surviving is surviving. When you’re surviving, you cannot be creative,” he said.
He emphasized that Cuban chefs have historically concentrated on acquiring food rather than innovating it. Dishes like Key West Pink Shrimp with caimito, preserved turnip, and coconut-curry broth showcase the unconventional offerings at Emelina.
Breaking Culinary Boundaries
Gonzalez is determined to do what would have been impossible in Cuba. The restaurant’s menu highlights beef prominently, a deliberate choice considering its scarcity back home.
“Beef was never part of our menu in regular life,” Gonzalez stated. “Here we chose to present it in a way that we think we could have it in Cuba.”
Emelina’s atmosphere is crafted to evoke memories of pre-revolutionary Cuba, aiming to transport guests back in time. Gonzalez describes his grandmother as embodying “that beautiful Cuban woman” from a departing era.
A Growing Dining Scene
As West Palm Beach’s dining scene expands, Gonzalez believes Emelina’s achievement is just the beginning. He envisions more chefs settling in the area and contributing creatively.
“I think in five years from now there’s going to be a lot more chefs like us that are going to move into the area and contribute,” he said.
For Gonzalez, earning a Michelin star is a milestone, yet maintaining it presents the true challenge.
“Every chef’s dream is to have a Michelin star,” he said. “But keeping this star is what’s the really hard work.”
